Corned Beef With White Sauce

Recipe Ingredients:

1.5kg Of Extra Lean, Corned Silverside
1 Bay Leaf
1 Teaspoon Peppercorns
500ml White Sauce

Recipe Instructions:

1. Remove the corned beef from its plastic bag and rinse under cold water. Place into a large saucepan or stockpot, then add the bay leaf, peppercorns and enough cold water to cover the meat by 3cm.
2. Cover the pan and bring to the boil over high heat, then reduce the temperature to very low and simmer for about 2 hours or until the meat is very tender. Remove the saucepan from the heat but leave the meat to sit in the poaching liquid for another 20 minutes before carving.
3. To serve, drain the corned beef and carve into thick slices. Divide among serving plates and serve drizzled with the white sauce. Serve with steamed vegetables such as potato, pumpkin, carrots and cauliflower on the side.
