Recipe Ingredients:

50ml Honey
100ml Soy Sauce
50ml Olive Oil
1 Teaspoon Sesame Oil
2 Pork Fillets (about 250g Each)
3 Red Radishes, Thinly Sliced And Julienned
1 Tablespoon Pickled Ginger
1 Bunch Coriander, Leaves Picked
1 Tablespoon Olive Oil, Extra
1 Shallot, Thinly Sliced
2 Birdseye (small Red) Chillies, Finely Chopped
6 Bok Choy, Leaves Separated
2 Teaspoon Coriander Seeds, Crushed

Recipe Instructions:

1. Make a marinade by whisking together the honey, soy sauce, olive oil and sesame oil. Set aside a quarter of the marinade and pour the rest over the pork fillets. Marinate for half an hour.
2. Preheat the oven to 220 degrees. Remove the fillets from the marinade and discard the liquid. In a hot pan, brown the meat all over then transfer to an oven tray and bake for 10 minutes.
3. Remove, loosely cover with foil and rest for 7-10 minutes. Meanwhile, place the radish, pickled ginger and coriander in a large bowl.
4. Heat the extra oil in a wok until smoking and add the shallot, chilli and bok choy. Toss over high heat until the bok choy has just wilted.
5. Add the vegetables to the other salad ingredients, pour over almost all the reserved marinade and toss well.
6. To serve, divide the salad among four serving plates and sprinkle with crushed coriander seeds. Slice the fillets thickly and place next to the salad. Drizzle with reserved marinade.
