800g Small Desiree Potatoes 1 Teaspoon Salt Freshly Ground Black Pepper 1/3 Cup Potato Flour 1/3 Cup Fine Rice Flour
Recipe Instructions:
1. Peel the potatoes and place in a large saucepan of boiling water. Cook whole for 10-12 minutes or until soft. Drain and set aside for 10 minutes to cool slightly. 2. Place the warm potatoes in a large bowl, add the salt and season to taste with pepper. Mash with a potato masher until the mixture is very smooth. 3. Mix the flours together in a medium bowl, then add to the mashed potato. Use your hand to make a stiff, slightly sticky dough that leaves the side of the bowl. Take care not to overwork the dough as it will become too sticky. 4. Cut the dough into four even portions. Roll one portion into a long sausage about 2cm thick on a lightly floured surface. Using a knife dusted in flour, cut the dough into 2cm pieces. Place on a flat baking tray lined with a floured tea towel, spacing the gnocchi so the pieces don\'t touch. 5. Repeat with remaining portions of dough. 6. Bring a large saucepan of water to the boil. Add the gnocchi in batches (they should sit in a single later on the base of the pan) - they may stick together if overcrowded. Remove with a slotted spoon when they all rise to the surface. 7. Drain, and transfer to warmed plates. Cover loosely with foil.
