Recipe Ingredients:
Base: 1/2 Cup Rice Flour 1/4 Cup Potato Flour 1/3 Cup Corn Flour 1/4 Cup Sugar 1/4 Teaspoon Bicarb Soda 1/4 Teaspoon Baking Power 1 Teaspoon Xanthin Gum 60g Butter (Melted) 1 Egg (Beaten) 1 Teaspoon Vanilla Essence
1. Preheat oven to 180 degrees. 2. To make the base, sift all ingredients, up to and including Xanthin Gum, into a large bowl 3 times. From here add the rest of the ingredients into the bowl and mix together until a dough forms. 3. Roll it out flat and put it in a tin. Prink holes in it and place into the fridge for 10 minutes. 4. Cook for 10-12 minutes until golden brown and then let it cool. 5. To make the Caramel, put all the Caramel ingredients in a saucepan and heat whilst mixing constantly. 6. Bring to a boil and then turn down the heat while continuing to mix until it too turns golden brown (approximately 5 minutes). 7. Place over the base and cook for 10 minutes in the oven then cool. 8. To make the Chocolate, melt it and place onto of the slice. Place in fridge to let it set.
